Chia Seed Pudding

Chia Seed Pudding might just be the easiest healthy breakfast you can make. All you have to do is stir chia seeds and milk together along with any sweetener of choice and a couple of hours later you’ve got the most delicious chia pudding.

 1 cup vanilla-flavored unsweetened almond milk
 1 cup plain low-fat Greek yogurt
 2 tbsp local honey, plus 4 tablespoons extra for serving
 1 tsp pure vanilla extract
  tsp Sea salt
 ¼ cup chia seeds
 1 pt strawberries, sliced
 1 pt blueberries
 ¼ cup sliced almonds, toasted

In a medium bowl, gently whisk the almond milk, yogurt, 2 tablespoons honey, the vanilla and sea salt until just blended.

Whisk in the chia seeds; let stand 30 minutes. Stir to distribute the seeds if they have settled.

Cover and refrigerate overnight.

Before serving, in a medium bowl, toss the strawberries and blueberries with the remaining 4 teaspoons maple syrup. Mix in the almonds.

Spoon the Chia pudding into bowls or glasses; mound the berry mixture on top and serve.
