Cilantro Lime Chicken, ya’ll! It’s got a punchy and bright flavor, it’s insanely easy to make and it’s so versatile. Eat it with a side of rice, shred it to make tacos or slice it for salads and burrito bowls! It’s just the best.
Make marinade: Whisk together 2 tablespoons olive oil, cilantro, lime juice, garlic, and cumin. Add chicken and toss to coat evenly with the marinade. Cover with plastic wrap and refrigerate for at least 30 minutes.
When you’re ready to cook the chicken, preheat oven to 375 degrees F.
Pour olive oil into a large oven-proof skillet to cover the bottom of the pan. Heat over medium-high heat. Season both sides of marinated chicken with salt and pepper.
Add chicken skin-side down, sear until skin becomes golden and crispy. Flip the thighs and cook till golden brown (about 2 minutes). Pour the remaining marinade in the pan with the chicken and transfer pan into hot oven.
Bake until the chicken is cooked through, about 20 minutes more. (internal temperature of 160F)
Drizzle with extra pan drippings.
